7 ounces of Fat free vanilla pudding
½ Teaspoon vanilla extract
1 Cup plain low-fat Yogurt
2 Tablespoons lemon curd
Zest of 1 whole lemon
1 Tablespoon fresh lemon juice
2 Tablespoons of honey
3 Cups of mixed strawberry, raspberry, and blackberry
1. Whisk together in a mixing bowl the yogurt, vanilla pudding, lemon curd, and the vanilla extract, and set aside for later use.
2. Mix the lemon juice, lemon zest, and honey in a separate bowl. Pour all the berries into this mixing bowl and gently coat each piece with the honey mixture.
3. Make the parfait by scooping one scoop of the yogurt mixture in a glass or goblet. Top it with a portion of the honey-coated berries. Make another layer of the yogurt-vanilla mixture on top, and then add some more of the berries.
4. Chill for at least an hour to cool down the parfait, or serve immediately.
